Verde & Tercera: coffees of the full reality harvest

Verde and Tercera have always existed within the group’s production. Every harvest naturally creates different qualities of coffee — not only first and second grades, but also coffees that come from underripe cherries or from the physical sorting loss of higher-quality lots. Traditionally, these coffees were sold into the local market at low prices, with little visibility and few alternatives.

Today, Verde and Tercera are approached differently — not as leftovers, but as intentional coffees that reflect the full reality of farming. Verde comes from green, underripe cherries that are unavoidable during harvest. Each producer dries and processes their Verde separately before the coffees are milled, cupped, and blended based on quality and consistency.
Tercera is collected only after all coffees have been fully processed and sorted. It consists of the green-bean sorting loss from higher-grade coffees — including microlots and main blends — brought together at the mill and prepared as a distinct lot.

In both cases, these coffees are handled with care, transparency, and intention. Rather than disappearing into anonymous trade, they are blended thoughtfully and prepared for export with quality control in place.

Pricing for Verde and Tercera is based on local market realities, with preparation and export costs added openly. This ensures that exporting these coffees makes sense for producers and does not undercut local buyers. While these coffees are more affordable, they still contribute meaningfully to farmer income.

Verde and Tercera represent a shared philosophy: every part of the harvest has value. They are honest coffees — not defined by perfection, but by responsibility, consistency, and respect for the work behind them.

By selling these coffees to TSU, farmers are able to enjoy a higher price and offer a greater spectrum of acceptable qualities each year. The Verde and Tacera are made by different constellations of farmers. Verde is mainly composed of coffees from Gonzalo, Ramon and Freddy,Sergio and Arianova. Tacera is from Ramon, Rony and Gonzalo.

 

PROCESSING

Signatures lots are hand-picked by all farms, these lots undergo the same care as the single farmer lots, but are the bulk lots that are sorted to SHG standard instead of microlot standard.

  • The price you pay for the Rojo Signature lot made by the entire community.

  • Farmgate is calculated based on the proportions of coffees used to create the blend. It is assumed that farm gate paid to farmers for single lot is fixed with the only variation being the amount of coffees per blend.

  • The blend is created based on cupping and matching the flavour expectations of Rojo from the previous cooperation but with present farmers of Madrono group.

  • International shipping from Ocotal Nicaragua to Rotterdam, Netherlands.

  • Average financing cost owed to (mostly social) lenders. This ensures immediate payment to the farmers when the coffee leaves the farm or port.This is also includes stock surchage, storage fee and customs

  • A standard TSU premium on all coffees designated exclusively to accelerate farmers’ own regenerative agriculture project

  • This Side Up compensation for spending time and resources importing this coffee.
