Pangkhon Black Honey

Second year that Ata and Pupae produce a black honey lot. The slow drying allows more sugar to penetrate green beans. This method produces coffee that is sweet and full bodied.

Pangkhon Natural

Highest scoring lot we have from Thailand. The coffee rests in the coffee pods for additional two months. This produces a complex, sweet, fully bodied with winey and berry character.

Saket Semi Washed

A local favourite in Holland last year. Experimental lot partially fermented for 12 hours, cleaned the wet parchment, but left a trace of mucilage resulting in a half-way process between fully washed and a honey. Combines crisp acidity with thick sweet body, great for medium roast.

Saket Yellow Bourbon Natural

Singled out the Yellow BM-139 and processed it as a thinly dried natural process. The lower mucilage level for this yellow varietal means lower moisture mass for the coffee to lose as it dries so there is less chance for in-bean fermentation. Results in an extra complex, but cleaner natural process.
